Kale. It's what's for dinner.

Since buying a juicer, I find myself with a lot of kale in the fridge. Today I decided to see what a kale salad would taste like.

I cut up some kale leaves into little shredded strips, added equal portions of carrots and tomatoes. Then added a diced avocado into the mix. Finally, topped it all off with lemon infused olive oil and sweet balsamic vinaigrette.

I left the thick center stems of the kale leaves out. The leaves are tough enough without trying to chew through half a tree branch.

After all that, it tastes pretty good. Probably because the other ingredients hide the kale taste pretty well.

Junk Mail for One-Year Olds

Nicholas is growing up so fast. He got his first haircut about a month ago. Yesterday he got his first junk mail. I'm not sure where he's submitting his info, but I guess we'll have to pay more attention to his internet usage. You know, now that he's 1.

I guess I should be glad it's just junk mail. At least his email account isn't filling up with spam.

One-Year Old Learning the iPhone

Nicholas is figuring out how to do new things everyday. One of his favorite toys is the iPhone. He even knows that our old iPod is not nearly as great as the iPhone. He walks around with it either looking at the pictures, pretending to talk, or accidentally dialing. He's trying to figure out the camera too. Right now its a mystery. But he does like to talk to the baby on the screen.

It's not easy being a little boy at the playground. Luckily, Nicholas recovered nicely with only a bump and a bruise left after his playground misstep. Besides, you hardly notice that bump after he landed face first on the floor a few days later.
